Rajma Masala is a popular vegetarian dish from the northern region of India. It is made with kidney beans cooked in a thick and spicy tomato-based gravy, and is often served with rice or flatbread.
Here's a simple recipe for Rajma Masala:
Ingredients:
- 1 cup kidney beans (rajma), soaked overnight
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil
- Coriander leaves for garnish
Instructions:

Drain the soaked kidney beans and pressure cook with enough water and salt for 4-5 whistles, or until the beans are soft and tender.

In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and sauté for a minute. Then, add chopped tomatoes and cook until they turn soft and mushy.

Add coriander powder, red chili powder, turmeric powder, garam masala powder, and salt to the pan. Mix well and cook for 2-3 minutes.

Add the cooked kidney beans along with the water to the pan. Mix well and bring the mixture to a boil.

Reduce the heat and simmer for 10-15 minutes or until the gravy thickens.

Garnish with coriander leaves and serve hot with rice or flatbread.
