Here's a simple recipe for Sweet Shakkar Para:

Ingredients:

  • 2 cups all-purpose flour (maida)
  • 1/4 cup semolina (sooji/rava)
  • 1/4 cup ghee (clarified butter), melted
  • 1/2 cup powdered sugar
  • 1/2 teaspoon cardamom powder
  • A pinch of salt
  • Oil or ghee for deep frying
  • Water, as needed

Instructions:

  1. In a mixing bowl, combine all-purpose flour, semolina, powdered sugar, cardamom powder, and a pinch of salt. Mix well.
  2. Add the melted ghee to the flour mixture and rub it with your fingers until the mixture resembles breadcrumbs.
  3. Gradually add water, a little at a time, and knead to form a firm dough. Make sure not to add too much water; the dough should not be sticky.
  4. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
  5. After resting, divide the dough into small portions and roll each portion into a thin, rectangular sheet (around 1/8 inch thick).
  6. Use a knife or a pizza cutter to cut the rolled dough into diamond-shaped or square pieces. You can also use a cookie cutter for different shapes if desired.
  7. Heat oil or ghee in a deep pan or kadai for deep frying. Make sure the oil is hot but not smoking.
  8. Gently slide a few pieces of the cut dough into the hot oil and fry them on medium heat until they turn golden brown and crispy. Fry them in batches, ensuring not to overcrowd the pan.
  9. Remove the fried Shakkar Para from the oil using a slotted spoon and drain them on a kitchen towel or paper towel to remove excess oil.
  10. Allow the Shakkar Para to cool completely before storing them in an airtight container.
