Recipe For Preparing Goat Shoulder
INGREDIENTS

1 goat shoulder (1.5 - 2 kg)

Black Pepper

Fresh aromatics: Halved garlic cloves, 1 chopped onion, fresh celery and parsley leaves

2 tablespoons olive oil

1 cup Beef broth

1 cup red wine
FOR THE AROMATIC RUB

2 tsp allspice seasoning

2 tsp cumin powder

1 tsp dried pepper or paprika

1/2 tsp cinnamon powder

1/4 tsp nutmeg powder

1/4 tsp cardamom

1 pinch garlic powder

Juice of 2 lemons
Instructions
1.Trim the goat shoulder of all but a thin layer of fat, then season it with the flavorful rub, salt, and black pepper.
Place the meat on a plate, cover it with plastic wrap, and chill for 12 to 24 hours.
2.et your oven to 200 degrees Celsius for preheating.
Prepare the fresh herbs and aromatics for roasting with the goat while it's heating up.
3.Pick up a large Dutch oven, sturdy frying pan, or saucepan that can withstand the oven.
Put the fresh aromatics in the pan's bottom.
4.The fatty side of the goat shoulder should be facing up as you place it on top of the aromatics after thoroughly coating it in olive oil.
5.Over the goat shoulder and veggies, prepare a combination of beef broth and red wine.
6.Place the goat shoulder over a roasting pan with some water in the bottom and a wire rack above it.
The goat shoulder should be cooked for around 4 hours at 160 degrees Celsius to get fork tenderness.
